Cannonau: the Sardinian wine par excellence

Cannonau is one of the most famous red wines of Sardinia. To produce it are usually used Cannonau grapes, selected and harvested by hand at the end of September, but sometimes are used also other black berry grapes, not aromatic (in a maximum percentage of 15%).

Its spread is due to the fact that the vine variety is rustic and resistant to aridity. It is present also in the variations Classico, Riserva, Rosé, Sweet and Dessert wine.

Treatment: the grapes ferment in steel tanks at the controlled temperature of twenty-five degrees and then refine in barrique for a year and in bottle for two months.

Description: the colour is ruby-red with orange reflects, mostly if the wine is aged. At the smell one feels scent of grape, red fruits, jam, sweet resin and, in the variations Riserva and Classico, spices. The taste is soft and tannic.

Complement: it matches well with meat starters (cold cuts) and aged cheeses, first dishes of pasta seasoned with meat sauces.
