Dolcetto d’Alba is a red wine coming from vineyards present in about thirty Districts in province of Cuneo (and Asti, for Dolcetto d’Asti). It is one of the thirteen denominations of Dolcetto, maybe the most famous, and to produce it are used only Dolcetto grapes, harvested at the end of September.
Treatment: after being carefully selected, grapes macerate on peels in steel tanks for ten years. The refinement is made first in those tanks and then in bottle. The ageing isn’t usually considered, but when it is, there is Superiore variation.
Description: the colour is ruby red, with violet reflects. At the smell one can feel fresh scents, with red fruits marks. The taste is dry and a bit bitter; the texture is medium-bodied.
Complement: it matches well the entire meal, in particular starters and aged cheeses.
