Gavi

Gavi is a white wine coming from vineyards present in the same name district in province of Alessandria. Other districts of the province where it is made are Bosio, Capriata d’Orba, Carrosio, Castelletto d’Orba, Francavilla Bisio, Novi Ligure, Parodi Ligure, San Cristoforo, Serravalle Scrivia.

To produce it are used only Cortese grapes, harvested between the end of September and the beginning of October. This wine has obtained the Controlled Denomination of Origin in 1974 and the Controlled and Granted one in 1998. There are different variations of it: still, sparkling, Riserva, Riserva sparkling classic method.

Treatment: grapes ferment in steel tanks at the controlled temperature of eighteen degrees for three weeks.

Description: the colour is straw-yellow, sometimes with green reflects, and at the smell one can feel flowers and fruits. The taste is rich, full-bodied and smooth.

Complement: it matches well with starters, fish dishes, white meat and vegetables. It is perfect with the typical dish tajarin al tartufo (truffle tajarin), a long egg-pasta.
