Vermentino, the ideal Sardinian wine for fish dishes

Vermentino is a white wine of Sardinia (to be not confused with the Tuscan one) coming from vineyards present in Gergei, in province of Cagliari and near the one of Nuoro.

To produce it are used Vermentino grapes, harvested by hand, in a minimum percentage of 95%. Vermentino of Gallura is typical of the same name region in the North-West of the island and the only Sardinian wine with the Controlled and Granted Denomination of Origin (obtained in 1996, while the one of Controlled Origin was in 1975). Vermentino is present in the variations Superior, Sparkling, Sweet and of late harvest.

Treatment: after the separation between grapes and stalks (destemming), grapes are lightly pressed and cooled at the temperature of four degrees, to preserve their features. Then they macerate and ferment in steel tanks at a controlled temperature for a month. At the end, the wine is filtered and put again in steel tanks for the refinement.

Description: the colour is light straw-yellow, with bright reflects. At the smell one can feel rural flowers and white fruit.

Complement: it matches well with first and second fish dishes, even rich.
