Micòoula Fair 2018 in Hone
The Micòoula fair in Hone is a highly anticipated event in the Valle d’Aosta areas. Hone is in fact a small village-municipality located in the autonomous region of Valle d’Aosta famous for its typical bread, made with an ancient recipe: the Micòoula, precisely. A simple and poor product that, like all the products of the Aosta Valley culinary tradition, is perfect to taste during the cold winter days. The fair in its honor falls every year near the Christmas period and is a real cultural event, from the traditional moment of the “sfornata” (taking it out of the oven) that opens the dances followed by events of both musical entertainment and dedicated to the world of food and wine, with tastings of typical products and much more.
The Micòoula: let’s discover it together…
Hone’s Micòoula is a chestnut-based bread. Its recipe even has medieval origins, and derives from the tradition (typical of the areas located in the Camporcher Valley) to prepare chestnut bread by recycling the leftovers from the first baked rye bread, combining flour with fresh chestnuts. The Micòoula bread is therefore a bread made with a mix of rye and wheat flour, to which raisins and a good quantity of freshly picked chestnuts are added. Obviously, as usual, the Micòoula is left to leaven exclusively with sourdough, which gives it the acidity and at the same time the lightness typical of long natural leavenings.
