Treatment: the grapes ferment in steel tanks at a controlled temperature of twenty-eight or thirty degrees, then the wine macerates for ten or twelve days, with daily pumping, matures in barrique for nine months and refines in bottle for a year. The wine ages well, from three to five years.
Description: the colour is ruby red with violet reflects. At the smell one can feel scent of fruits, in particular red ones, leather and spices. The taste is strong and smooth, tannins are lightly present, with an aftertaste of vanilla, wood scents, graphite (somegrouns can transmit to the wine also mineral marks), stewed prunes and licorice.
Complement: it matches well with soups, roasted or braised red meats, game, cold cuts, aged cheeses.
