Caponata pantesca

From the volcanic soils of this remote Mediterranean paradise were born several popular specialties that have spread throughout Italy and abroad, among which will definitely stand the famous Capperi of Pantelleria (capers).

Widespread on the island only in the modern era, since the nineteenth century, the caper is a typical shrub of luxurious Mediterranean flora: on average 30-50 cm high, this plant has very showy flowers whose delicate white and pink colors are delicate violet hues.

In the period between late May and early September of each year, according to region, the caper starts flowering, and that’s when you practice the collection of flower buds, not yet opened and become flower, which must be collected as soon as possible. The production is scalar, expected that just picked the first button floral branch is left free to grow steadily and consistently, for a varied and continuously production.

Extra virgin olive oil

2 eggplants

1 onion

4 tablespoons tomato sauce

2 stalks of celery

10 olives

Directions

Brush with olive oil the bottom of a pan and place on fire. Add the sliced ​​onion subtly, the sauce, the celery sticks, olives and capers. Cook them for about ten minutes and then add the eggplant cut into cubes. Eggplants can be fried to taste. Add salt and half a tablespoon of sugar and a tablespoon of vinegar and allow to simmer for a few minutes before serving.
