Vernaccia of San Gimignano: the Tuscan white wine appreciated all over the world

Vernaccia di San Gimignano comes from vineyards present in the hills of San Gimignano, in province of Siena.

It is usually produced with only Vernaccia di San Gimignano grapes, but there can be also other non aromatic grapes (in any case for a percentage of composition lower than 10%): Sauvignon and Riesling. It is a wine that has obtained both the Controlled Denomination of Origin in 1966 and Controlled and Granted Denomination of Origin in 1993.

Treatment: grapes are lightly pressed and ferment in steel tanks at a controlled temperature of eighteen degrees. In these tanks, too, there is the ripening on yeasts for five months and then the wine is bottled.

Description: the colour is light straw-yellow with green and, during the ageing, golden reflects. At the smell one can feel flowers (broom, mimosa and tilia) and fruits (apples, grapefruit, citrus fruits and pears). The taste is balanced, dry and aromatic, full-bodied and long lasting, with an agreeably bitter aftertaste.

Complement: it matches well with starters and first dishes, rice and pasta salad, ribollita (Tuscan soup made with lots of vegetables and dry bread), fish dishes (baked, fried, en papillote), raw fish, white meats, vegetables, fresh and middle aged cheeses.
