Pinot nero is a red wine of Trentino coming from the same name vineyard. To produce it are used Pinot nero grapes, harvested by hand in the first ten days of October.
Treatment: grapes ferment at a controlled temperature, then the wine refines in barrique for a year or a year and a half, and at the end bottled.
Description: the colour is ruby red and at the smell one can feel scent of raspberries, blueberries, cherries, currants, citrus fruits, pomegranates, vanilla, ginger, olives, fennels, coffee, black pepper, jasmine, mint and chocolate. The taste is strong and balanced, the texture smooth and velvety is given by tannins.
Complement: it matches well with risotto, red and white meats, roasts, fish (seared tuna, for instance), snails, pumpkin dishes, aged cheeses.
