Frascati Superiore is a white wine that comes from vineyards of the place Santa Teresa in Rome and in the areas of Frascati, Grottaferrata, Monte Porzio Catone and Montecompatri. It is produced with various grapes in a mixed composition: Malvasia di Candia for the 50%, Malvasia puntinata del Lazio for the 30%, Trebbiano toscano and Greco for the 10% each.
In 2011 it has obtained the certification of Controlled and Granted Denomination of Origin.
Treatment: grapes are harvested by hand, lightly pressed, then they ferment for about a week in steel tanks at a controlled temperature of fifteen or sixteen degrees. After that, there is the refining and, finally, the bottling, from January to June.
Description: the colour is light golden yellow. At the smell one can feel mainly scent of flowers and a delicate mark of sage. Taste is full, soft and fresh, with a long lasting almond aftertaste.
Complement: it matches well with starters and first dishes, fish dishes, white meat, pizza, fresh goat’s milk cheese.
