Biferno Rosso has obtained the Controlled Denomination of Origin in 1983 and is made with Montepulciano (maximum 70%), Trebbiano toscano (maximum 20%), Aglianico (maximum 20%) and potentially other grapes (maximum 5%). Thaks to the presence of Montepulciano and Aglianico grapes, it is suitable for ageing that, if reaches three years, gives Riserva as a result.
Treatment: grapes macerate on peels for about a month and ferment in the malolactic way. Then, it refines both in barrique and steel tanks, before being bottled, where it rests for six months.
Description: the colour is ruby red with violet reflects. At the smell one can feel plums, leather and licorice. The texture is smooth, soft and balanced.
Complement: it matches well with first dishes, white and red meats, game, fresh and aged cheeses, fish dishes.
