AROMI – where cuisine becomes poetry

In the refined silence of the Giudecca, where the water reflects the buildings with slow and deep movements, there is a place that does not just serve dishes: it tells them. It is AROMI, the gastronomic restaurant of the Hilton Molino Stucky Venice, one of the most fascinating destinations in the contemporary Venetian scene. With the arrival of spring, AROMI renews its soul and presents an author’s menu that moves between technique, memory and vision.

This culinary narrative is orchestrated by Ivan Fargnoli, an Executive Chef with a cosmopolitan look and a deeply Italian soul. His philosophy is summed up in a phrase that is already a manifesto:

“I cook stories, not dishes. Each ingredient is an accent in a language that speaks of travel, emotions and roots.”

A menu that crosses the world, without leaving the lagoon

The new path of Fargnoli is a sensory journey that does not fear contamination. From Asia to the Mediterranean, each course is built with gastronomic awareness and narrative intelligence.

Marinated salmon with caviar and Thai sauce opens the experience with an exotic elegance. Followed by the amberjack sashimi with kefir and herring caviar, which plays on fermentation, and the Fassona tartare with Karashi mustard, marrow and whiskey, which elevates raw meat to moment of contemplation. The duck consommé with oriental spices, signature dish, is a suspension between the East and childhood memory.

The first courses express a rare combination of research and intuition: the artichoke risotto and Cynar is a symphony of vegetable bitterness and delicacy, while the tortelli di fegatini alla veneziana surprise with saffron, lemon and licorice. Spaghetti with black squid with yuzu kosho bisque and sea urchins are pure Mediterranean broken by the east wind, and mafaldina with lamb tartare and lavender tells an archaic and aromatic Italy.

Between the seconds, the Glacier 51 with chorizo and bouillabaisse melts seas and continents, and the lamb tenderloin with asparagus and truffle lures the earth with force. Wagyu with pak choi and ‘nduja is a powerful symphony, while aubergine with tomato, parmesan and basil celebrates the essentiality of the Italian garden.

“Sweet Memory” is the name chosen for the dessert collection. And it’s no coincidence. Here, pastry becomes introspection. 

AROMI is not a restaurant in the classical sense. It is a narrative place, where every dish has a time, a rhythm and a voice. It is a place where Italy meets the Orient, not to surprise, but to listen. It is a cuisine that does not consume: it remembers.

In a Venice often overrun by tourist clichés, this address resonates as a rare place: intimate, cultured, contemporary. And, above all, free.
