Primitivo di Manduria

Primitivo di Manduria is a red wine of Puglia coming from vineyards present in San Marzano and Sava, in province of Taranto and it is typical of the area of Salento (Avetrana, Carosino, Erchie, Faggiano, Fragagnano, Grottaglie, Leporano, Lizzano, Manduria, Maruggio, Monteparano, Oria, Pulsano, Roccaforzata, San Giorgio Jonico, San Marzano di S.Giuseppe, Sava, Torre S. Susanna, Torricella).

To produce it are used only Primitivo grapes, harvested by hand at the beginning of October.

Treatment: grapes ferment in steel tanks at a controlled temperature of twenty-four, twenty-six degrees for ten days. Then the wine refines in barrique for a year before the bottling.

Description: the colour is dark ruby red with bright reflects. At the smell one can feel scent of fruits, among which cherries and dried figs and spicy marks. Taste is embracing and sweet. If left ageing, the colour tends to orange and the texture becomes smooth.

Complement: it matches well with red roasted meats, pasta seasoned with ragu, soups and aged cheeses. If it is in the dessert wine variation, it is perfect with desserts, like dry cakes, fruit tart and chocolate.
