Lasagna for all seasons, 5 recipes

Among the first Italian dishes loved all over the world and prepared especially for festivities and important events include them, the legendary lasagna! The traditional recipe, categorically Bolognese, includes the filling of meat sauce but, over time, many different and delicious ideas have been born that allow you to satisfy tastes and needs even very different from each other.  

Made mainly in winter (since they are cooked in the oven), lasagne can however be prepared even in summer, choosing seasonal ingredients and serving them even at room temperature. Here are 5 recipes easy to prepare, tasty and original:  

Lasagne with radicchio and smoked scamorza 

A variation of the traditional recipe of lasagna involves replacing meat sauce with radicchio and smoked scamorza, giving rise to a “white” and extremely light dish.

ingredients

1 head of radicchio; 

1 clove of garlic; 

1 liter of milk; 

1 tablespoon and ½ of flour; 

50 grams of butter; 

extra virgin olive oil. ; 

nutmeg; 

salt; 

scamorza in cubes; 

parmesan.

proceeding: 

take the head of radicchio, clean it and cut it into strips; 

sauté the clove of garlic in a pan with a little oil; 

add the radicchio cut into strips;  

prepare the béchamel sauce by mixing the milk, flour and butter; 

add salt and nutmeg; 

while the becciamella thickens, butter a pan and begin the composition of lasagne alternating sheets of pasta, béchamel, radicchio and smoked scamorza cubes;

cover with a handful of grated parmesan cheese; 

Bake at 180 hrs for about 20-25 minutes.

Once the “crust” has formed on the surface, the lasagna will be ready to be baked and served. 

Lasagna with pumpkin and porcini mushrooms 

Perfect for the autumn season, lasagne with pumpkin and porcini mushrooms are able to delight anyone using ingredients typical of the moment. The result is a light and super colorful dish, which will surely appeal to children.

ingredients: 

1 pumpkin; 

extra virgin olive oil;  

2 cloves of garlic;  

béchamel; 

500 grams of mushrooms; 

parmesan.

proceeding: 

peel the pumpkin, cut into cubes and cook in a pot with a little oil and a clove of garlic; 

add a little water and let it cook for about 20 minutes; 

once cooked, pass the pumpkin in the mixer to obtain a homogeneous cream, then add a little béchamel sauce; 

slice the mushrooms and brown them in a pan for about 10 minutes together with garlic and oil;  

butter a baking pan and roll out the dough sheets, alternating with the pumpkin cream and mushrooms; 

cover with a sprinkling of grated parmesan cheese; 

Bake at 180 hrs for 25 minutes.

Here, too, a crust will form, which will be the signal to churn out the lasagna, form the portions and share them with the most loved ones. 

Lasagna with artichokes and brie 

For those who love particular cheeses, here is a really inviting recipe: that of lasagne made with brie and artichokes, two ingredients that blend perfectly with each other and that give not only an irresistible flavor, but also a super inviting scent.

Ingredients:: 

1 bunch of artichokes; 

1 pack of brie; 

béchamel; 

extra virgin olive oil; 

1 clove of garlic;  

parmesan; 

salt.

The dish obtained is an apotheosis of aromas and flavors that is really difficult to give up. A good proposal to celebrate important events and surprise guests.  

Lasagna with pistachio pesto and mint 

Directly from Sicily comes this really interesting recipe: it is the lasagna made with pistachio pesto, a typical Sicilian product, and mint. For those who love green is definitely a highly inviting idea.

ingredients:  

pine nuts;  

fresh mint; 

mozzarella fiordilatte (optional); 

parmesan or pistachio grain; 

extra virgin olive oil.

proceeding: 

prepare the pesto by chopping the pistachios and pine nuts in a mortar; 

add fresh mint, grated parmesan and oil; 

to mix well the whole avoiding the formation of lumps;  

butter a pan and alternate the sheets of dough with the newly prepared mixture; 

add slices of mozzarella fiordilatte, if desired;  

sprinkle with grated parmesan cheese or pistachio grain; 

Bake at 180 hrs for 25 minutes.

If children see Hulk’s favorite lasagna and do not hesitate to finish their portion, adults will have to deal with a delicacy that they will remember for a lifetime (and will not wait to redo).  

Lasagna with scallops and spinach 

Finally, here is another alternative to the traditional recipe that focuses on the combination of cheese and vegetables: lasagne stuffed with spinach and squacquerone, two ingredients capable of giving life to a winning combination.

ingredients:  

spinach;  

butter; 

salt and pepper; 

toasted pine nuts; 

chopped nuts; 

parmesan.

proceeding: 

boil the spinach in boiling and salted water, drain and chop;  

in a pan heat a knob of butter, then add the spinach and season with salt and pepper; 

in a bowl pour the squacquerone and work with a fork to make it softer; 

add the spinach, toasted pine nuts and chopped nuts; 

butter a pan and place the dough sheets alternating with the seasoning; 

cover with a handful of grated parmesan cheese; 

Bake at 180 ºC for about 20 minutes.

The softness of the squacquerone together with the crunchiness of pine nuts and nuts will be a crazy combo for the palate.  

Lasagna is one of the queens of Italian cuisine and like all queens can also wear modern clothes, while knowing remain a timeless classic of Emilian cuisine.
