The salt of the Salina di Cervia is an integral sea salt produced, collected and packaged according to the traditional method. Not artificially dried, it maintains its natural humidity (2%), which is typical of unrefined sea salt, allowing the presence of all the trace elements present in sea water, such as iodine, zinc, copper, manganese, iron, magnesium and potassium.
It has always been known as a sweet salt, not because it has a lower salting capacity, but because of a more limited presence of bitter salts, such as magnesium, calcium, potassium sulphates and magnesium chloride, i.e. those substances for the more insoluble, which give the salt that bitter aftertaste less pleasing to the palate.
