Malvasia

 

Malvasia Salina is a Sicilian dessert wine that holds its origins in vineyards in the Aeolian islands. It is produced solely with Malvasia grapes. 

Treatment: grapes are dried in the sun for one or two weeks after the harvest. When they are dry, they ferment in steel tanks at a controlled temperature of sixteen degrees for twenty-five days. Then, the wine refines in the same tanks for six months, before being bottled.

Description: the colour is intense yellow with golden reflects. At the smell one can feel scent of fruits (apricots, raisins), spices and herbs (black pepper and lemongrass). The taste is both sweet and acid, dessert wine, fresh and long lasting with citrus fruits marks.

Complement: it matches well with starters, raw fish and sea food, shellfishes, fried, fresh cheeses, desserts.
